Dark Chocolate Chunk Cookies with M&Ms

Hello! Welcome to February 2020 — I can believe its already the second month of the year. I’ve been spending a bit of time thinking about what I want 2020 to be for me, for this blog, for my career and I have to say its been challenging to start up {this blog} again. I keep telling myself I will, then I don’t. It did bring me happiness so I think I will continue to try to make it work for me.

Anyway. More thoughts to come on that I am sure, but for now lets get to the cookies!

While I haven’t been writing as much, I certainly have still been baking and cooking. These cookies were born from wanting to have something fun for valentines day, but also easy to adapt to any time of year!

I was inspired to make these by the new (newer) cookbook by Hummingbird High — Weeknight Baking

This recipe book has a lot of fantastic ideas for the week-night baker, or the person who wants quick and easy recipes that you can whip up and be the belle of the office the next day.

So back to the cookies! I used extra dark chocolate in these cookies, but you can obviously use whatever chocolate you like or have on hand.

I also prefer large chunks of chocolate, as they really make a statement but chocolate chips will work just as well. I would just add a bit more to the recipe so that they are really chocolaty. ๐Ÿ™‚ and of course you don’t need to use M&M’s but they do add a bit of fun. I chose the ubiquitous valentines day colors — but sky’s the limit with M&M’s. In fact, you can find a similar recipe that I made a while ago here, if you’re looking for something not so valentines day related. ๐Ÿ™‚

Dark Chocolate Chunk Cookies w/ M&Ms

sink your teeth into these delightful chocolate chunk cookies — perfect for valentines day!

Prep Time 20 minutes
Cook Time 15 minutes
Servings 24 Cookies

Ingredients

  • 1/2 Cup Butter Unsalted
  • 1 2/3 Cup All Purpose Flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp Kosher Salt
  • 3/4 Cup brown sugar packed
  • 1/4 Cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 Cup Chocolate Chunks
  • 1/2 Cup M&Ms

Instructions

  1. Preheat your oven to 350 Deg F

  2. In the bowl of a stand mixer, cream butter and sugars together until light and fluffy. Add eggs one at a time until fully incorporated. Follow with Vanilla

  3. In a separate bowl, whisk together flour, baking powder, baking soda and salt until combined. Slowly add to butter mixture and mix until just combined.

  4. Fold in chocolate chunks with a spatula. Using a cookie scoop (#24) scoop cookies onto parchment lined cookie sheets. Push 3-4 M&M's into the top of the cookies.

  5. Bake for 12-15 minutes or until cookies are set and slightly brown around the outside. Remove from pans to cool for 10 minutes. Serve immediately or store in a air-tight container for up to 5 days.
