Rice Krispy French Toast

Happy sunday! How did it get to be sunday already? Ugh. The weekend is almost over, but! Why not go out with a bang? This rice krispy French toast is so good….it will make you want it everyday of the week. I know Kory and I raved over this French toast because it is just so extra, but in a good way.

Rice Krispy’s add a layer of crispiness to this French toast that just puts of over the edge of deliciousness. With a little bit of honey some fresh fruit and an almond butter drizzle, my heart be still. It’s so good. You must try this combo!

I was actually surprised that this combo tasted so good and also surprised at how easy it was to assemble. It’s really just one extra step in making French toast and you can hear the snap, crackle and pop as it cooks!

Plus the rice krispy treats absorb some of the butter as the French toast cooks, and it makes the toast super rich and flavorful.

Once the French toast is cooked and warm in the oven, it’s time to assemble your plate! I topped mine with a drizzle of almond butter and honey along with some fresh berries and powdered sugar. mmhmm. I don’t think it gets much better.

      Ingredients
      • 1 Loaf Brioche Bread, or similar
      • 2 Cups Half and Half
      • 1 Cup Milk
      • 3 tbsp Sugar
      • 6 Eggs
      • 1 tbsp Vanilla extract
      • 1 tsp Almond extract
      • 4 Cups Rice Krispy Cereal, Crushed
      • 1/2 Stick Butter, unsalted plus more for serving
      Servings:
      Instructions
      1. The night before, prep the brioche by slicing it into 1 inch thick pieces and let dry-out over night. If you are making this the day of, just slice the bread and let dry in a warm oven for 30 minutes.
      2. Preheat your oven to 200 degrees F. In a large bowl, combine half and half, milk, sugar, eggs and extracts. In a gallon plastic bag, lightly crush the rice Krispy cereal. Place on a plate.
      3. Set up the assembly line with the dry brioche bread, egg mixture, and cereal. Dunk the bread in the egg mixture for 30 seconds and then directly into the rice Krispy cereal. Press to adhere the cereal to the bread and allow to rest on a plate. Repeat with other pieces of brioche.
      4. Heat a griddle over medium heat and add 1 tbsp. of butter. Cook coated brioche until golden brown on both sides. Place in warm oven to hold until ready to serve.
      5. Enjoy with all of your favorite toppings.
