Do you need a mid-week pick me up? Well look no further! I have a one-bowl chocolate sheet cake recipe for you! So easy and quick, it can be your dessert tonight or wow all your co-workers tomorrow!

This Chocolate Cake is so rich and yummy it will knock your socks off — well maybe not literally. But you know what I mean. And to top it all off with a rich marshmallow frosting. *ugh* so good.
For this cake I used a dark chocolate cocoa powder, which just adds a nice rich color and a depth of flavor to the cake. I also think that it take away a bit of the sweetness that can come from a sheet cake. Of course you can use a normal cocoa powder, just make sure it’s of good quality! Good Quality Ingredients = Great Food.
So this recipe starts on the stove top by melting the butter cocoa powder and water together. This allows the cocoa powder to liquefy and really marry with the fats in the butter to make a rich base.
After that, it really is a one bowl wonder as everything goes into a large bowl and gets whisked together. You’ll want to cool your butter/cocoa mixture, but the eggs, coffee and yogurt get whisked into the flour mixture before hand — so no scrambled eggs here!
Anyway, you want to make sure you don’t over bake this beauty as a moist cake is always a good cake. 🙂
Once your cake is cooled, it’s time to frost! This marshmallow frosting is so easy and such a decadent topping to this already rich cake Don’t get me wrong ,this cake is great by itself but the frosting just takes it over the top! Plus, then you can add sprinkles, and everyone loves sprinkles. 🙂 I get mine here.

- 2 cups All Purpose Flour
- 1/4 cup unsweetened cocoa powder
- 2 cups Sugar
- 1 teaspoon Baking Soda
- 1 teaspoon Kosher Salt
- 2 large eggs
- 1/2 cup Greek Yogurt
- 1 teaspoon Vanilla extract
- 2 tbsp Coffee
- 1/2 Cup Butter, unsalted
- 1 Cup Marshmallow Fluff
- 3-4 Cup Powdered Sugar
- 2 tbsp Milk
- Preheat oven to 350°. Grease and line a 13x9" baking dish with parchment paper. Bring cocoa powder, 1 cup butter, and 1 cup water to a boil in a small saucepan; remove from heat.
- Meanwhile, whisk sugar, baking soda, salt, and 2 cups flour in a medium bowl. Make a well in the center. Add eggs, yogurt, and vanilla to well. Blend with a fork, then gradually incorporate dry ingredients. Add butter mixture and whisk until smooth. Scrape batter into prepared baking dish and smooth top.
- Bake until cake starts to pull away from edges of dish and a tester inserted into the center comes out clean, 35–40 minutes. Transfer pan to a wire rack. Cool Complete before frosting.
- In the bowl of your stand mixer, cream butter & marshmallow fluff together. On slow speed, add Powdered sugar and milk until frosting reaches your desired consistency.
