Hello and happy Taco Tuesday! Are you having tacos today? I sure hope so…and if you weren’t planning on it, maybe this recipe will change your mind!
Do you remember when your mom would buy the Taco kit from the grocery store and some ground beef and voila! There was dinner? I know I do. Now, as an adult I think back to that ground beef mixture with the nostalgia of youth because let’s be honest — as an adult it’s never as good as it was when you were a kid.
Why is that? I mean just the thought of things like Chef-Boyardee now kinda gross me out, but back then no way I was going to miss out on those ABCs!
Anyway, I digress…back to tacos. So THESE tacos are definitely not from a box, and they still bring back that childhood feeling, but they are definitely not gross.
So, I made up my own Taco Seasoning, which I feel is the heart of this dish, and so many of those taco seasoning packets have so much sodium in them — so no thanks — but I guess this dish would turn out ok by using a Taco seasoning packet. (don’t worry I’m judging you for thinking about it) But! I did use 2 tablespoons of a Ranch Seasoning packet because a) I’m a hypocrite and b) it just adds a depth of flavor and a richness to the taco meat.
But you do what you want. 🙂
I also made my Taco seasoning a *little* bit spicy with some Hatch Chili Powder I got while we were in Santa Fe, NM a while ago and man did that kick it up a whole lot. Now, regular chili powder is not super hot, but you could cut down on it and add more paprika if you’d like. You can also leave out the red chili flakes in the recipe if you have kids or people sensitive to spicy things in your household. Don’t worry, your Tacos will still taste good!
Anyway, so that was my little blast from the past for you guys today on taco Tuesday! The best thing about having tacos on Tuesday is that it’s an excuse to eat queso and re-fried beans too. 😉

- 1 Pound Ground Beef
- 2 tbls Taco Seasoning (see recipe below)
- 2 tbls Ranch Seasoning
- 1/2 Cup Chicken Broth/Stock
- 4-8 Corn or Flour Tortillas
- Lettuce, Shredded
- Cilantro, Chopped
- Limes, quarted
- Salsa
- Cheese, Shredded
- 2 tbls Chili Powder
- 1 tbls Garlic Powder
- 2 tsp Kosher Salt
- 1 tsp Oregano
- 1 tsp Mrs. Dash Onion & Herb
- 1 tsp Cumin
- 1 tsp Paprika
- 1/2 tsp Red Pepper Flake
