Hello and happy hump day! Today we’re talking scones. Yummy delicious scones. With berries. did I mention that?
These are a perfect breakfast for you on-the-go types a well a those work-from-home types. Just perfect all around!
So I decided to whip these up because a) they are easy to make and b) because I had some fresh berries that I needed to use. I used strawberries and blueberries in this mix, but you can use whatever berries you have on hand. You can even use frozen berries right in the scones. (the frozen berries may blend a bit more in the batter as they cook, but they will still taste great!)
As we head into summer — oh wait, did I speak too soon? Didn’t it just snow up north??? Crazy. well it’s starting to get warm down here in Alabama so — ya’ll are welcome to come visit and get out of the cold! But anyway, as I was saying…with summer right around the corner and berries coming into season, these will definitely be a go-to in our house!

- 2.5 Cups All Purpose Flour
- 2 tbls Sugar
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp salt
- 1/2 Cup Butter, unsalted (cubed & cold)
- 1 Cup Buttermilk
- 1 Eggs
- 1 Cup Mixed Berries
- Preheat oven tp 400 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, combine flour, baking powder, baking soda, salt and sugar. In a separate bowl, combine egg with buttermilk.
- Add cubed butter to flour mixture and using your fingers or a pastry cutter, "cut" the butter into the flour until the mixture is crumbly and the butter resembles small peas.
- Add the buttermilk/egg mixture to the flour and using a fork or wooden spoon, mix together.
- Add mixed berries and stir to combine.
- Turn the dough out onto a well floured surface (the dough may be very sticky) and form into a rectangle and pat out to about 1 inch thick.
- Cut the dough into 12 squares and place 1-2 inches apart on your prepared pan. Brush the tops with milk and sprinkle with sugar, if desired.
- Bake for 25-30 minutes or until scones are set and beginning to brown. Remove from oven and cool on a wire rack.
- To make the glaze, combine 1 Cup powdered sugar, 1 tsp vanilla extract & 1 tablespoon milk in a small bowl. Spoon over cooled scones.
