Hello Hello! Happy Friday eve! Who’s ready for the weekend? I know I am!! Let’s celebrate with this fantastic Slow cooked pulled pork!
You can slap this in your slow cooker tomorrow morning and boom! Dinner for Friday night.
I decided to make some sliders out of this pulled pork with some vinegar slaw and spicy BBQ sauce but you could do just about anything with it — sandwiches, salads, by itself…it’s delicious!
So let’s get started:
For the Pulled Pork:
- 4 pound pork shoulder
- 1/2 Apple Cider Vinegar
- 1 tablespoon Liquid Smoke
- 4 Garlic Cloves, Chopped
- Salt & Pepper to taste
(recipe from the cookbook The Pretty Dish)
For the Slaw:
- 1 Bag Cole slaw salad mix, buy your favorite
- 1/2 Cup Shredded Carrots
- 1/4 Cup Cilantro, chopped
- 2 tsps apple cider vinegar
- Juice from half a lime
- 2 tsps sugar
- 1 tbls Dijon mustard
- 1 tsp salt
- 1 tsp pepper
For the BBQ Sauce:
- 3/4 Cup your favorite BBQ sauce, I used Sweet Baby Rays
- 2 tbls Sriracha Sauce
- 2 tsps Apple Coder Vinegar
Ok! so to get started, liberally salt & pepper the pork shoulder and sear in a large pan until all sides are browned (if you have a crock pot that will do this for you, do it in the crockpot!).
Once the meat is browned, place it in the crockpot and add the remaining ingredients (liquid smoke, garlic & Apple cider vinegar). Turn to coat the meat.
Turn your our crockpot on low and cook for 8-10 hours. After that time the pork should shred easily with a fork.
When you are about 30 minutes away from eating, make the Vinegar Slaw. Start by combining all of the ingredients, except the slaw, in a large bowl. Add the Coleslaw and toss to coat in the dressing. Set aside to allow the flavors to meld.
Now on to the BBQ sauce! It’s eays, just mix all of the ingredients together and voila! It’s done.
To serve, toast some slider buns, I used potato buns, and pile on the pork, slaw and BBQ sauce.
Enjoy!
