Hi! Wow…two posts in one day? Well aren’t you lucky! More like, I didn’t want to miss out on the chance to give you a simple and easy way to celebrate PI Day! Which happens to be tomorrow! Stay tuned though, because I have a pie recipe going live tomorrow that you wont want to miss!
Anywho…My husband and I are quite the nerds to celebrate 3.14 but hey…its an excuse to make these cookies! Here’s what you’ll need:
- 1 Frozen Pie crust, thawed
- 1/4 Cup butter, melted
- 1/4 Sugar
- 2 teaspoons ground cinnamon
Super easy right???? So here’s how you put it all together:
Start by preheating your oven to 350F. Next, roll out your thawed pie dough on a lightly floured surface. Trim the excess so that you have a rectangle that is about 15×9 inches.
Next, melt the butter and allow to cool slightly. Using a brush, slather the butter all over the pie crust — no need to leave a border. Now, combine the cinnamonĀ & sugar in a small bowl. Sprinkle that stuff all over the buttered crust.
Spread to the edges of the dough, then starting at the long edge, roll it up tight. Once the dough is rolled, use a knife to cut even slices. This recipe usually yields 12 cookies.
Now take your rolled cookies and place them on a parchment lined cookie sheet and bake for 15-20 minutes or until the sugar is caramelized and the tops of the cookies are browned. Yum!
Remove from the oven and allow to cool to room temperature. To store; place in an airtight container for up to 3 days — if they last that long that is!
And that’s it! A simple and delicious way to celebrate PI day!
