Hello! Are you at a loss for what to make for Valentines day dinner? Have someone special coming over or maybe you just want to try something different? Well I bet you have everything in your refrigerator & pantry to whip this recipe together! Its delicious and impressive, so let’s get going!
Ingredients:
- 1 Ib pasta (spaghetti or tagliatelle)
- 2 eggs
- 2 egg yolks
- ~ 1/2 Cup Parmesan cheese
- ~ 1/2 Cup Romano Cheese
- 1 tsp red pepper flakes
- 2 tsp chopped garlic
- 1 tsp Black pepper
- 1 tsp Salt
- 1 T Olive Oil
- 3-4 rashers of bacon
- 1/2 – 1 Cup Pasta water
Start by bringing a large pot of water to a boil. Once the water boils, add a bit of salt and the pasta. Cook the pasta until just shy of al-dente.
Meanwhile, heat the oil in a large skillet over med-high heat and add the bacon. Cook until crispy & fat is rendered. Remove the bacon from the pan and cool.
In a bowl, beat eggs & egg yolks in a bowl with the salt, pepper, & 1/4 cup of each cheese.
Turn off the heat and add the garlic & red pepper flake to the pan. Sauté for 1 minute. While pan is still hot, add the cooked pasta directly from the hot water & toss to coat in the fat.
Now, add the egg mixture directly to the hot pasta and toss vigorously to coat. It is important to do this quickly so that you don’t get scrambled eggs on noodles.
Add pasta water as needed to loosen the sauce — follow with the remaining cheese & bacon pieces.
Serve immediately.
