No Bake Oatmeal Bars

Happy hump day! This recipe is guaranteed to brighten your week — great for breakfast or a snack, these no bake oatmeal bars come together in a snap & are delicious.

Here’s what you’ll need:

  • 2 Cups Rolled Oats
  • 1/2 Cup Peanut butter
  • 1/4 Honey
  • 1/2 Cup White Chocolate (melted)
  • 1/4 Cup Dried Cranberries
  • 1 Cup Chocolate chips
  • 2 Small – Medium Bananas

Of course you can substitute any of the ingredients for things you have in the pantry and if you have any peanut allergies — use almond butter — just as delicious! So now lets assemble:

No real finesse needed here, just add all the ingredients to the bowl, starting with the oats, peanut butter, & honey.


**A tip for adding honey to the mix without wasting it or struggling to get it out of the measuring cup is to use a bit of no-stick spray in the measuring up prior to adding the honey. Slips right out!**

Now you can add your mix-ins. I used slightly smashed bananas and then mashed them more when I mixed them in. Its up to you how chunky you’d like your banana to be in the bar.


Next add the melted & cooled white chocolate & mix together. Follow with the chocolate chips (I used a combination of white and semi-sweet chocolate chips).


Mix together & place in a 8×8 dish lined with wax paper. Why wax paper? Well since you are not baking these bars, the wax paper will allow the bars to separate from the pan easily when they are set.


Once you’ve smoothed out the bars in an even layer in the pan, place in the fridge for a hour. Then cut into squares & serve! Leftovers can be kept in the fridge in an airtight container for up to a week.
